DIY Low Calorie Ice Cream



I have been looking for a sweet frozen desert that is low calorie.  With some experimentation I believe I have come up with one that will tantalize your taste buds and be easy on you wallet.
The ingredients needed are:
1. pure whey protein powder
2. sugar free instant pudding powder
3. ice cubes
4. Vanilla sugar free almond milk or cashew milk
5. stevia

You will also need to have a small blender.  I use the Magic Bullet personal blender.

Begin by adding 1 cup of ice to blender 

next, add 1 scoop (30g) of whey protein powder 

add whole package of sugar free instant pudding mix (you can choose the flavor)
add 1 cup of almond milk or cashew milk 
add 1-2 tablespoons of stevia to your taste.  The pudding mix already has some sweetener in it so you don't need a lot of stevia.
Blend this until you have a very thick mix. 

Put it in a plastic container and put in the freezer. 
With the ingredients I use this entire mix is 200 calories for about 2 cups of ice cream.
You may find it necessary to microwave the ice cream for 30 seconds when you take it out of the freezer to eat to soften it a little bit.

I find this to be a very filling and refreshing snack with realitively low calorie content.  It is high in protein.  You can experiment with other flavors of instant pudding mixes and other types of protein powders.
